Toast that bread and grab your big spoon, it is time to eat…

Anyone else love a cozy bowl of soup? Oooh, how I love to lean all the way into the cozy vibes of January even when the schedule is hectic and the temperatures are below freezing.
You know I love to be in the kitchen and I’ve been trying to cook more at home and try new recipes when possible. So this week during a busy workday I took a quick break to shovel. My ears immediately turned to popsicles and I dreamt of bathing in a vat of tomato soup while the wind was hurting my face. I came indoors and decided that with a busy evening of work and kid activities ahead I was going to prep soup and bread for dinner with whatever I had in my house already. Cozy AND free fresh bread smells? I’m in.

If you need some quick weekday dinner inspo, here I am. This recipe is quick, easy, and can be changed based on whatever you like (or don’t like!).

In between work things and before my kids got home from school, I chopped up what I had on hand – a whole head of garlic, a white onion, a giant sweet potato, and a head of cauliflower. I tossed them together in a bit of olive oil and seasonings (I did oregano, thyme, salt n pep, turmeric, paprika, and a garlic powder mix). Then I roasted everything at for about 40 minutes. Once they were good n’ roasty, I put them in a soup pot on low heat and stirred in some liquid.

Years ago, Molly and I used to represent Blendtec and it remains one of my favorite brands and has been SO worth the price. Mine is ten years old, used almost daily, and I’ve never had an issue. Fun story, I was with Blendtec at a trade show once when the CEO was blending brooms to show how powerful the machine is. Blending. Brooms. Talk about strong visuals and a fun client. ANYWAY. I throw everything in the blender to get it smooth and silky. Once it was all mixed up I put it back in the pot and wound up stirring in a bit more veggie broth to thin ‘er out.

We are folks who dip so I wanted something quick for a side. My husband’s best gift to me, my bread maker, continues to be my best. I made some quick French bread (it takes about 5 minutes of work from me and then the mint green queen takes it from there to mix, ferment, and bake). I put this together and let her rip for about four hours.

The end result was SO delicious and filling – my kids LOVED it. I topped mine with fresh parsley and hemp hearts, the boys opted for hemp hearts and some shaved carrots (gotta get that crunch!). 10/10 and perfect for a frigid January day.
